Hemp pizza dough

Make your pizza dough with vegan hemp flour, packed with nutrients (omegas 3-6-9, natural soluble and insoluble fibre and complete, easily digestible protein!) Ideal for enriching your pizza with good things without having to complicate your life!

Ingredients for 10 dough pieces :

  • 8kg flour: use 1.6kg t55 flour and 200g hemp flour
  • 4.5g fresh yeast (or 1.5g dry yeast)
  • 966g water
  • 40g salt
  • 52g olive oil

Steps :

  1. In a mixer, mix the flour (T55+hemp) with the yeast (crumble if fresh) for 1 minute.
  2. Then add 90% water to the mixture, and continue beating for 4 minutes.
  3. Add the remaining water and beat for a further 8 minutes.
  4. Add the olive oil and continue mixing with the mixer for 3 minutes.
  5. Stop mixing and leave to stand for 15-20 minutes.
  6. Roll out the dough pieces (280g each).
  7. Leave the dough pieces to rest in the refrigerator for at least 24 hours (48 is preferable).
  8. Take the dough pieces out of the fridge and leave them to rest for 2 hours at room temperature in an airtight container or plastic film, before rolling them out.

(If you need pizza dough for the evening, let the dough pieces rest at room temperature for at least 5 to 6 hours).
